
Lunch Box with Yellow Rice Salad, Chicken and Snacks


Ingredients
- YELLOW RICE SALAD WITH CHICKEN:
- 185 g Rice
- 1 Tbsp Turmeric
- 200 g Emborg Mixed Vegetables
- 2 Cooked Chicken Legs (or any other leftover chicken)
- SNACKS:
- 1 Handful Fresh Blueberries
- 1 Handful Fresh Grapes
- 2 Bananas
- 200 g Mixed Nuts and Raisins
Yellow Rice Salad and Chicken Leg
This quick and easy Vegetable Rice Salad with Chicken Leg makes a delicious and healthy lunch box for kids heading back to school! This delicious recipe is simple to cook and easy to eat on the go. What a hit!
Method
All you have to do is to cook the rice according to the package and add turmeric to the water. When the rice are cooking, prepare Emborg Mixed Vegetables by blanching them with boiling water.
When the rice are cooked, add Emborg Mixed Vegetables and mix. (tip: you can add butter to the salad for a more rich and creamy texture)
Put the Yellow Rice Salad in a container along with the pre-cooked chicken leg (or other leftover chicken). Remember to also include a fork and a napkin for the fingers.
Snacks

Method
